Gelo di mandarino

If you happen to find fragrant and juicy mandarins, I recommend you try this mandarin gelo from Pino Cuttaia, not the traditional Sicilian recipe with starch or frumina but only the juice filtered with sugar and thickener. A fresh and delicate end of the meal that leaves the clean mouth
INGREDIENTS:
500 g. of filtered mandarin juice
150 g. of sugar
8 g. of isinglass
PREPARATION:

Soak the isinglass sheets in a bowl of cold water.

Squeeze the mandarins to obtain approximately 500 grams of juice

Filter and pour the juice into a saucepan together with the sugar and the squeezed isinglass

Stir continuously and bring the liquid to a temperature no higher than 60°

Pour into pudding molds

Serve with grated lemon peel and chopped almonds or pistachios
