For the fig granita, we recommend using very ripe white figs. The black ones are not so sweet.
Ingredients:
Water: 500ml
Sugar: 80 gr
Ripe white figs: 600 gr
The peel of a lemon
Preparation:
Clean the figs with a cloth, remove the stem, cut them into quarters and place them in a non-stick saucepan adding 75 ml of water and the lemon peel. Cover them and cook them over medium heat for about 10 minutes, stirring occasionally. Now add the sugar, mix well and continue cooking in an uncovered pan until they are well caramelized, like jam. Leave to cool in the refrigerator for about two hours and then, after removing the lemon peel, puree them with the help of the immersion blender, gradually pouring in the 400 ml of water. Now pour this very cold mixture into a metal mold which you will place in the freezer to freeze. During the freezing time, about 3 hours, mix well at the end of each hour. Transfer the sorbet to the refrigerator half an hour before serving it.
