Among the seasonal fruits with which we can prepare granita, melon is certainly very fragrant, rich in phosphorus, vitamins, calcium, potassium, sodium and fiber and low in calories, despite its sugar content.
Ingredients:
Water: 250ml
Sugar: 100 gr
Yellow melon: 500 g of pulp
The juice and grated zest of ½ lemon
Preparation:
Clean the melon, removing the peel and seeds. Cut the pulp into small pieces and blend it. Prepare a sugar syrup by boiling the water together with the sugar, juice and lemon zest for 5 minutes. Leave to cool and blend the syrup as well, so as to crush the lemon zest. Combine the syrup obtained with the juice and pulp of the blended melon. Mix everything thoroughly. Leave to cool in the refrigerator for 30 minutes or in the freezer for about 15 minutes. As soon as the mixture has cooled well, transfer it to the ice cream maker. Then follow the manufacturer’s instructions. Once prepared, remove the granita from the ice cream maker and pour it back into a bowl. Stir it again, so that it softens slightly. Then pour the granita into the glasses, preferably cup-shaped. Garnish with a diced melon (optional). Accompany the granita with a brioche.
