The fundamental requirement for the success of ricotta ice cream is to use fresh top quality products. In the South it is found quite often, especially in the Palermo area, it has a particular taste that deserves to be tried, also due to the ease with which it is prepared.
Ingredients:
250g of sheep’s ricotta
75g of toasted pistachios
70g of sugar
Preparation:
Pour the sugar and ricotta into the beaker and then add the cream and milk. Mix with the immersion blender until all the sugar has dissolved and the mixture is smooth and homogeneous.
Pour the mixture into the ice cream maker and mix for 30-40 minutes. When the ice cream is ready, always leaving it in the ice cream maker basket, add the pistachios a little at a time, mixing them into the ice cream. If you want you can leave some to put on top of the ice cream to decorate.
